Afternoon
12 pm — The kitchen in full rhythm
Meshkak over lemon-soaked charcoal
The skewers go on at noon. Marinated overnight in dried loomi, turmeric, and a spice blend that belongs to no recipe card — only to memory.
Margoog
Lamb, root vegetables, thin regag torn into the pot. Four hours. A dish that cannot be rushed.
The Souq at 6 am
No sound. Just the market.
Machboos
Arrives in the same copper pot it cooked in. Saffron, dried loomi, whole spices, and time.
